I've discovered there are few bad things in life that cannot be made a bit easier with some good old fashioned comfort food.
Enter one of my favorite dishes : Grilled cheese and home fries. I can eat this for breakfast, lunch, or dinner. Last night I had it for dinner. Potatoes are my favorite vegetable. I make my home fries with red skinned potatoes which I like to cut up into small pieces, as you can see below. I fry them in extra virgin olive oil with a little bit of onion for flavor but not too much. I use sea salt instead of regular salt, and the rest is just dry seasonings. My beverage of choice to compliment this meal is chocolate milk. It's a pretty quick and simple recipe and ooooohhh so good...especially for cold winter days, like today. I love it when some of the cheese melts out of the sandwich and sticks onto the potatoes. Yum!

Pugsley: aka, the Sausage.

Out here in the Midwest, the combo with grilled cheese is tomato soup..
Always a great meal on a cold snowy day.

Now I know why I like you so much! haha Grilled cheese sandwiches and mashed potatoes are my two favorite foods in the entire world! :)

Rob - I do tomato soup and grilled cheese sometimes, like when I'm sick. But I love potatoes soooo much that I usually add them to any meal I can and I'd rather fill my belly up on those than most things :)
Janesca -- me too!!

This looks heavenly! My mouth is watering and it's not even lunchtime, lol!

Actually, your home fries would be delicious with breakfast..especially with good bacon and sunny side eggs, black coffee, and OJ
(grits optional, I'm not southern, but they do serve them at Cracker Barrel)

Yum!
I also like my homefries with Sausage and cheese sandwich on a hard roll and with cheeseburgers. There is something about the cheese and potato combo for me, double comfort!
Oh, and I LOVE Cracker Barrell too.....not a big fan of grits though, they taste a little like cardboard to me. Must be an acquired taste.

I am new to your blog, found it via Marni's blog. I, too, am a pug lover and fanatic, Her name is Fuji. I have owned pugs for over 35 years. No other dog can compare even thought I have 5 other breeds as well. My daughter would absolutely love that grilled cheese and fries, Fuji too. I don't know you but want to offer my condolences on losing your beloved Pugsley. Fuji is 10 now and really has no health problems just really bossy. They are little clowns in a dog suit. I am just getting into this blog thing and really enjoyed yours. I don't do much with mine.

Hi Becky,
Thanks for stopping by. Always nice to talk to a fellow pug lover. Thank you for the condoloences as well. Give Fuji a big kiss for me. I am glad he's a healthy boy, bossy is typical for the breed :)

I am new to your blog sorry about your loss of Pugsley no words can heal that hurt. Found you at Saving Sophia. My saying is "there is nothing like a pug."We have 3 now 12,5,and2 the latter in wheels. She is very sociable and visits every dog and person when we go to the dog park, of course she is a celebrity in her wheelchair.
Try grilled cheese on scali bread, I am also a potatoe lover will have to try the home fries with the grilled cheese. What spices do you use? Never seem to get mine just right.

Thank you Ken, I appreciate the kind words.
I will try the scali bread, that has sesame seeds, right?
Okay, here is my recipe for the home fries. Pretty easy, the key is to add and layer the dry ingredients as you flip them and go...
Red skinned potatoes (chopped into small pieces)
Extra Virgin olive oil (enough to coat bottom of pan)
1/4 cup (or less) chopped onions
salt
pepper
paprika
garlic powder
Boil potatoes for 10 or 15 minutes until just over al dente
In a deep skillet or frying pan, sautee onions in olive oil for 2 minutes
Add in potatoes
Flip potatoes on both sides to coat in the oil
Layer on all dry ingredients, to taste
Cook for about 10 or 15 minutes flipping often
Add more salt, pepper, paprika, and garlic seasoning as needed
Let me know how you make out if you try it!

Yummy is right...
my only changes are:
- golden grilled cheese made with muenster cheese. gets very stringy when melted.
- Oreida frnech fries that are extra crispy, soo bad yet ohhh so good even from an oven.

thanks Lori - I know what I'm having tomorrow night now :-)
Lori commented December 2, 2008 10:54 PM
MacGuy -- you know I love you BUT, how can you choose Oreida over home made home fries?? That is almost sacrilegious!
I am a fan of muenster cheese, have never tried it on my grilled cheeses though. only Land o' Lakes white american..
Lori commented December 2, 2008 11:53 PM
Sorry Becky, I Just reread your post and see Fuji is a girl. Forgive my tired old eyes....they are blurry from all the paint and wood construction in my house right now
MacGuy commented December 3, 2008 9:11 PM
Thanks Lori :-)
you are correct good home made fries are 1000% better -- but you see the Guy part of my MacGuy alias means I am a Guy and I like some things easy LOL I'll admit I am a tad lazy at times :-(
on that note this weekend I might make some homemade 3 cheese lasagna
